Curly Leaf Mustard Greens

I may be showing my southern roots, but curly mustard greens are absolutely one of my favorite greens. Early season greens give us a jump on our spring offerings, and properly prepared mustard greens are tender, acidic yet sweet, smokey, and spiced. They are a quintessential Southern dish, and the perfect side to any barbecue, fried chicken, or southern vegetable plate with mashed potatoes and fried green tomatoes. I'm getting hungry just talking about it! I like adding smoked meats or bacon to my greens. You MUST wash these guys if you want to remove the grit, don't skip this step!
