Spinach

Spinach, another of our early season greens. It's wonderful raw or sautéed, makes great quesadillas and dip (spinach and artichoke dip anyone?), but my absolute, all-time favorite is the spinach and strawberry salad. Nature knew what she was doing when she offered us these two ah-mazing crops at the same time! Grown using organic practices, $3/bag. Wonderful recipe to follow, but note that I swap feta for goat cheese, and olive oil for walnut oil - SO GOOD!
